Maybe cut it half and half with semi sweet and a high cocoa content.
Too much sugar and capsicum aren't the best mix.

I was planning on using cocoa powder primarily and adding a bit of cooking chocolate just for a richer texture.

and yeah, sugar is the anti-capsaicin. should be interesting trying to get a balance without overdoing the heat.

I use paprika to control heat for some dishes.
It doesn't take it away, but it prevents you from getting that awful acidic burn in your throat that leaves an awful aftertaste.
maybe add a spoonful or two of plain yougurt to the mix.
It'll add moisture and round the heat a bit.

yeah hmm.. I have some sour cream i could use. 14%. more fat, more taste.

the slight acidity would probably add some punch to the whole thing too.

Well, sour cream and creme fraise are pretty much the western versions of yogurt.

Actually, why don't you set up some creme fraiche now, it should be ready by tomorrow if you put it on top of your fridge at the back above the coil.

wtf does that mean?

are you expecting me to buy a cow, milk it, and make my own cream from scratch? cuz that ain't happenin buddy. Nvm the fact that I'm partially lactose intolerant and can't drink milk so I never buy any unless it's for cooking (which is pretty rare).

You can buy it, but in the hotels and restaurants we always made it.
Heavy cream, buttermilk (or a substitute) a small amount of mild acid and then we'd cover it and set it by a minimal heat source overnight.
It's kind of like a non cultured yogurt.

too much effort. I'm just gonna use the sour cream.

Also, now I can't get the sound of Randy Marsh (Stan's dad from south park) saying "creme fraiche" from that one episode where he watched too much food network.
