Favorite Burger Tweaks? - Agileguy - 05-30-2014

I love making my own burger meat. All you need is some ground beef (I even have good luck with frozen) and some spices. But what do you do to make it extra special?

My family has always used 3% beef, so I need to get creative to make the patties more moist. A few years ago I started adding cheese to the meat mix. My standby has traditionally been feta for both not being too greasy and imparting a great but not too salty flavor. I of course use regular seasonings like salt, pepper, oregano, basil, and shit like that.

But a few weeks ago I went crazy. I put a 4 parmesan blend in the meat, and then cut up some salami into tiny pieces and put that in there. I couldn't believe how disgustingly delicious that burger was. Far better than any bacon burger I had ever consumed.

I want to try putting some mustard in the mix next time. I fucking love mustard. What do you guys put in your burger batter?

my go-to burger seasoning mix consists of:

super finely chopped onion and maybe garlic if you feel like it
lots of dried thyme
lots of dried parsley
lots of another dried herb of your choice (basil, oregano, sage, summer savory, whathaveyou...)
salt
pepper
a bunch of paprika (smoked or sweet, but the smoked is extra awesome)
and my secret ingredient, a generous (not not too much) pinch of ground allspice.

as long as they are cooked properly and not squished or anything like that, them things come out tasting like lord of the cows.



but yeah, salami, bacon, any sort of fatty, salty, pork product is win. and I LOOOOOOOOOOOVE blue cheese on my burgers (but not in them)

I don't know why I stopped putting chopped onion in my burgers. I'll do that next time, thanks for the reminder. Paprika sounds perfect for a burger too I've tried it a few times before but I think I didn't put in enough. I'll try more of that and some allspice next time I make burgers.

I had blue cheese on my burger for lunch today. It is king of the burger cheeses, with Havarti coming in a close second.

Chop up some jalapeños and mix them into the meat.

There is a place in my hometown that has a house burger topped with egg salad. It changed my life forever.

I had a no chopped onion phase too. if the pieces are too big, it prevents the meat from holding together nicely, and it gets kinda crumbly and possibly falls apart when it's cooking and you try to flip it.

But if you chop it super fine, it's not a problem.

Ever try goat cheese on a burger?

Oh yeah, I love putting jalapeno pieces in there. They also go very nicely with bacon.

A burger with egg salad on top? That's interesting. I've heard of putting a fried egg on a burger but never egg salad.

I do the jalapeños thing from time to time. There's an ethnic grocery store here that usually sell jalapeños dirt cheap when they're in season. I like sautéing the chopped peppers with onions.

I've tried a fried egg on a burger, it didn't do much for me.

Now sliced avocado, I dig that on a burger. I find it really brings out the beef flavor. Ether sliced or mashed and mixed with mayo.

My Mom used to do stuffed burgers. You can't really put more then one thing in, but she'd do cheese, onions, bacon, jalapeños...almost anything.

I just had a three-cheese burger for dinner, cheddar, swiss and havarti, on a sourdough bun, that shit was good. I won't crap for a few days, and then it'll be like giving birth, but it was worth it. I love cheese.

Avocados are my shit. They're so easy to get out in CA and pretty cheap too. Unquestionably my favorite burger topping.

I love cheese too. A world without cheese is a world I don't want to take part in.

yep, avocado on burgers is AWESOME.

so is spicy mayo.

omfg. almost forgot. get some hen of the woods mushrooms. They're not too hard to find in a good supermarket. toss them in olive oil and roast them, either in a pan in the oven or in a vegetable tray on the grill. put on burger with a cheese of your choice. Eat. Die from overexposure to textural wonderland.

or sauteed king oyster mushrooms. doesn't have the amazing textural contrast, but holy hell, the taste!!!!!!!!!!!!!!!
