Finally, a rice pudding that doesn't completely suck - CTN - 02-15-2015

my fridge is barren. It's been several weeks since I went grocery shopping, and I decided to make some breakfast at home for once since I don't start work until a bit later today.

I had some arborio rice, a little bit of 15% cream, brown sugar, some butter, some raisins, and a small chunk of cream cheese. Also some raw cocoa butter in the pantry.

Rice pudding.

I added some water to the cream to thin it down and make it usable for cooking rice. sauteed the rice in butter first, then in went the cream. Dash of vanilla, bit of salt, some spices, brown sugar, raisins, and then just as it finished cooking, I added in some chopped up cocoa butter and the cream cheese.

I shit you not this is the best tasting rice pudding I have ever eaten. It is so well balanced in terms of flavour. not cloyingly sweet. Has this rich, sumptuous undertone of brown sugar and white chocolate without overpowering anything. And the salt and spices just nudge everything over a few notches so it really comes together beautifully.

If I never eat another rice pudding again I could be happy with the knowledge that this is the ultimate rice pudding.
