So remember how you are obsessed with smoked salmon?
Well I happen to have a smoker, and my uncle drove over yesterday and gave me a bucket of salmon. That he caught himself.

I have a friend who's from British Columbia. Last time she went back, she brought back some smoked salmon that her grandpa made. He caught the salmon himself in some virgin stream in northern BC, then hot smoked it in his thirty year old smokehouse. He only put salt, pepper and a bit of brown sugar on it.
I shit you not, it was the best hot smoked salmon I've ever had.

Sounds awesome. That's probably what I'll try. I'm gonna get a cold smoking adapter thing sometime soon.

I actually just made plans to build a cold smoker. It should be cool.
It'll be like a culinary convection auto-bong.

Hot smoke goes in, cold smoke goes out and then gets recycled. I'll post the plans when I get them drawn out a bit better.

you could pilfer a cooling coil system from an old beat up fridge or air conditioner. Just make sure to isolate it from the fire. You don't want freon tanks exploding near your delicate salmon :\
