holy shit, world's most annoying omelet maker too.

I've been trying to make great french omelettes lately. Surprisingly tougher than it seems.

I dunno if it's my stove heating unevenly or my pan, but the omelet keeps sticking to the bottom of my non-stick pan right in the middle.

very annoying.

I use cast iron - heat it up, lube with a little Pam, and then butter. Really never have sticking problems, unless I don't get my pan hot enough.

I don't like using spray grease.

Maybe the not hot enough thing is my problem.

I'll try again sometime. maybe with a different pan to eliminate that.

Cast iron is my go-to for anything breakfast. The heat retention of that much iron really helps.
