Hi, my name is Ryan....

...and I have a crippling addiction to smoked salmon.

Cold smoked, hot smoked, it don't matter. I cannot get enough of the stuff.

I polished off a bagel and cream cheese along with a solid expensive chunk of hot smoked salmon for dinner today. It was SO good, SO GOOD, that it is now burned into my memory. The fragrant smokiness, the tender texture of the middle contrasting with the slight chewiness of the smoke ring, matching up perfectly with the bagel's smokey crust hiding a soft pillowy interior (cuz montreal bagels are baked/smoked in a wood-fired oven) and the decadent cream cheese as well.... holy shit. To say it was glorious would be a gross understatement.

It was the kinda thing you eat when you sit down to a meal with God at his palatial estate beyond the pearly gates and get served by some pissant lesser angel named Percival, wearing a tuxedo and referring to you directly as "sir".

"Would sir like another bagel?"

Dammit, why do i have to like expensive things? :(

We went for brunch at the Hasty Pudding Club at Harvard. My Jewish buddy ordered lox and bagels and the amount of salmon on the bagel was pitiful. Plus they charged him $15. He was bullshit. He said they should sew his foreskin back on and throw him out of the tribe for paying for it. Fast forward we are a buffet style brunch a few months later and they had salmon. He announce he was going to get his lox karma back and proceeded to eat more fish than your average Alaskan bear.

Used to have to smoke and thin slice it , way cheaper then buying it already done. Easy job to do and you can order a whole fish(or5) and get it to your house in 1 day (out of the water). A small learning curve is involved but if you can smoke and have knife skills you can do it yourself a whole lot cheaper and easier. Plus it will be a million times better . I can see if my fish guy has cheap ones already done too, he will do that when it doesn't sell in a couple days.
