In an effort to widen my horizons, I picked up a package of frozen catfish, covered with a cornbead/jalapeno breading from the store. The breading kicked ass, the fish..not so much.

I've decided I really don't like fish, unless it's beer battered and deep fried.

We have been doing big Sunday dinner lately yesterday was. The meal was pretty healthy which was the goal.

Grilled chicken breast stuffed with spinach and feta cheese
Steamed asparagus
Grilled tomatoes
White rice
Vanilla frozen yogurt with a fresh blackberries drizzled with a fresh raspberry reduction

It cracks me up how versatile we are on this site. T&A in one forum, recipes on another. And nearly everything in between. We have it all!!

I had more fish today, there was a sale when I bought the catfish. It was Gorton's cajun blackened whitefish fillets. I'm glad I had spinach for a side dish.

I've got a couple more boxes of different shitty fish to try.
