you guys are too uptight about this.
I live in quebec, so I've had the opportunity to try horsemeat. It's not too bad. Tastes a bit like bison. Very lean, and a bit minerally. Probably healthier than any beef, pork or chicken, cuz nobody raises horses strictly for meat so you don't have the problem of dealing with questionable feed, random growth hormones and crap like that.
horsemeat + bacon fat + onions, tomatoes, garlic, parsley = wonderous
