Dude: pot roast.
Sear a fucking huge piece of meat on a pan with olive oil and s&p.
Throw a bag of small carrots, some onion, and red potatoes in the crock pot with the seared (but not cooked) meat. Take a packet of Lipton onion soup mix and shake it over the contents of your crock pot and add water or broth and let cook until juicy tender and potatoes are done. Overcooked? Mash those taters and add some canned gravy. Boom.
Awesome, cheap and hilariously simple. It's kinda like a beef stew without the excess liquid and with a shitload more meat. If you keep a pack of your favorite dinner rolls on hand, you've got yourself a meal fit for a king. Do you like chili? Crock pots are good for that. Do you like burritos? Crock pots will do that too.
