I'm marinating 4 Tri-Tip right now. I got a new smoker for my birthday, so these are gonna be my first tests.

Pics to come.

Braise or slow roast?

it was a quick roast actually.
the tip of my soldering iron was loose and I somehow (I have no idea how, must've been a sudden but temporary onset of retardation) I grabbed the shaft of the iron. got a nice burn on my index finger, the part that rides along the bottom of the fretboard when I'm playing.

In any case, back to the smoker, because smoked foods are the essence of all happiness in the world.

Chris, what's in your marinade duder? and how long are you gonna smoke that sucker?

Fresh ginger, coffee, beer (fat tire), apple juice, orange juice, smoked chile puree (rehydrated in coffee), chipotle pepper, soy sauce, onion, and garlic.

I think I'm gonna call it the hangover marinade. It smelled really good.

I'm not entirely sure how long I'm gonna smoke it, this is the first time I've used the new smoker. I have a meat thermometer in it, so we'll see.

Well, they didn't turn out nearly as flavorful as I hoped. I didn't realize that I forgot to trim the fat until this morning (I unknowingly bought them untrimmed), so I think that affected the marinading process. Live and learn I guess.

They're still very smoky tasting and tender, so that's good.

tbh i don't know much about smoking techniques and what not.

But the best real smoked BBQ foods I've ever had were from this crazy good southern BBQ place near my old house and all their stuff (brisket, pulled pork, ribs, chicken and meatloaf) was all unmarinated. they just used a dry rub and threw it in the smoker with hickory wood for like 12 hrs.

Yeah. I use dry rubs a lot, I just figured I'd try something different.

Luckily I have 2 tri tip left to experiment with.
