seeing as this is the day after the night of the drunken ramblings, I felt that I earned myself a kickass breakfast.
So I made some epicness.
3 egg omelet, country style a la Jacques Pépin.
Bacon, because bacon
A bagel with cream cheese and smoked salmon
and another bagel with cretons (pronunced cret-aww, it`s a quebecois specialty, sorta like pâté, but made with different spices, and it uses only ground pork instead of liver) with sharp yellow mustard
Fuuuuuck yyeeeeeeaaaaah

Never understood the appeal of creton.
We have to put it out every breakfast, the French go nuts for it and the English think it looks like dog food.

I like it. Not as rich as pâté, nor quite as complex, but equally enjoyable in terms of texture. I wouldn`t be able to eat pâté for breakfast every morning, but I can quite happily have cretons with some degree of regularity and not get tired of it.

I would like to try cretons. How fatty is it and does it have a lot of nitrates?

It is quite fatty. Actually it wouldn't even have the paste like consistency it does if it wasn't for the fat. Nitrates... Generally no, because it's kinda a niche thing. It's not very common outside of Quebec, and most places around that make it here are private farms and such. There are no giant brands that make cretons. But I guess it depends on the person making it and how much they feel salts and preservatives are necessary in their production. Ordinarily, the large amount of fat acts as a preservative.

Naw, I just had a craving and fortunately most of the stuff I needed was on sale at the store.

Saturday is my normal kickass breakfast day. Yesterday I made crispy potatoes, and an English muffin sandwich with two eggs over easy, sauteed onions, and hot sauce. So fucking good. We were out of bagels though. :(
