Chicken wrapped in prosciutto marinated in wine and garlic
Grilled portabella mushrooms
Steamed broccoli
Old school baked Mac & Cheese

Roast pork, simmered in gravy.

I haven't decided if I'm using it for a sandwich or if I'm serving it up over pasta or rice.

Made some sort of Nasi Goreng (Indonesian fried rice) with chipotle peppers (dried and rehydrated not the canned adobo sauce stuff). Fried egg, sunny side up, on top.

Giant slices of roasted eggplant with a simple chipotle rub (S+P, oregano, ground chipotle) on the side.
