Hey guys, I need a little help.
I haven't really been eating well, or regularly. I've been stressed out from work and a little depressed so when I get home I don't have the energy to cook. It's easier to either make a tv dinner or just go to bed.
So yeah, who has some simple suggestions that require minimal preparation and have maximum flavor?
Trust me, I'm a medical professional.

Do you have a crock pot? If not, it might be a good idea to get a small one. There are a buttload of recipes that require no after-work effort and often minimal before-work effort.

Here's a super simple spaghetti sauce recipe:
rough chop 1/2 a small onion
rough chop 3 tomatoes
rough chop 1/2 a stalk of celery
2 cloves of garlic
Put it all in a cast iron pan and put it in a preheated 350 degree oven for 20-30 minutes.
Place it all in the blender (btw - when blending hot items remover the ceter piece form the lid and hold a cloth or paper towel in it's place or the air with expand uickly and blow the lid off) with a handfull of spinach and blend it up, then add s&p to taste.
Viola, instant tomato spinach sauce.
Low fat, a serving of veg and contains iron, protien, fiber and anti-oxidants.
Cast iron pan is easy to clean and for an easy clean on the blender 1/3 fill with warm water and a squeeze of dish soap and then cover and blend.

I could make you some food at some point in time but I am pretty busy right now taking care of my friend after major surgery. I can send you the recipes for marinara and meatballs too but it takes some time and a little work might be more then you are prepared to do.

Dude: pot roast.
Sear a fucking huge piece of meat on a pan with olive oil and s&p.
Throw a bag of small carrots, some onion, and red potatoes in the crock pot with the seared (but not cooked) meat. Take a packet of Lipton onion soup mix and shake it over the contents of your crock pot and add water or broth and let cook until juicy tender and potatoes are done. Overcooked? Mash those taters and add some canned gravy. Boom.
Awesome, cheap and hilariously simple. It's kinda like a beef stew without the excess liquid and with a shitload more meat. If you keep a pack of your favorite dinner rolls on hand, you've got yourself a meal fit for a king. Do you like chili? Crock pots are good for that. Do you like burritos? Crock pots will do that too.

When I was a single man I would do my shopping and food prep on Saturdays. I would separate the meat into single servings and have the veggies ready to rock and roll (peppers chopped, onions chopped). One meal I loved when I was working out was red beans & rice with chicken.
One small chicken breast
Small can of kidney beans
1/2 cup of rice
Cup of water
Chilli powder, salt, pepper - some garlic (garlic powder) or chopped onion (onion powder) if you have it laying around.
Dump everything into one pot. Bring it to a boil for 5 minutes reduce the heat and let it simmer for 15 minutes. How easy it that.

I am going to make a Lasagna and maybe some pizza soon , if you want some I can leave you a piece or 5 at my house that you can pick up from Moms. Will send a message or something but I can barely find my own ass these days.I have tried to feed you more then a few times ,you should just accept that I cook really good food and feed my friends.Been doing that for 40 some years now and you might actually enjoy it too. Made some beenie weenies for my buddy I am watching over the other night and he said they were the best he ever had. Lots of bacon , cook the diced onions in the grease add the hotdogs into the onions to get extra flavor.Just add the beans , Worcestershire sauce and some mustard of choice. Meal of all around goodness!

This one is similar to Bruce's suggestion. Easy food, right off the soup can label:
Fill a large baking pan with (2 cups?) of uncooked rice. Add 1 can Campbell's Cream of Mushroom soup, one can Cream of Cellery soup, and one can of water. Stir it all together and spread evenly in pan. Put several boneless chicken breasts on top of the rice mixture. Sprinkle one package of Lipton's Onion Soup mix over the top. Bake in the oven (I dunno - probably 425 degrees for 45 minutes) and then eat.
Takes 5 minutes to prep and will feed you for a few days.
