The Ultimate Easy Potato Salad Recipe Returns

With Memorial Day here I want to repost my Ultimate Potato Salad recipe. This potato salad recipe has been tweaked over the years and has aspects from multiple recipes I have encountered. The largest influence being my Mom’s recipe.

Truth be told this is a bit of a a smashup of my chicken salad recipe and my Mom’s potato salad recipe. This potato salad has a great texture the peppers, celery and onions give it a great crunchy texture and it is easy to make. The garlic, mustard and dill pickle brighten up the dish 

5 large potatoes peeled, chopped (pieces the size of your thumb) 
1 small onion diced 
1 bell pepper diced 
3 stalks of chopped celery 
1 tbls of fresh dill 
2 tbls of chopped garlic 
1 tsp of mustard 
1 chopped dill picked spear 
¼ cup of chopped scallions 
1/3 cup of mayonnaise 
Boiled eggs and paprika for garnish.

You first want to boil your potatoes until they are tender they should fall apart with a fork. While the potatoes are boiling I tend to throw the eggs in with the potatoes to boil at the same time.

Put all of the ingredients in a bowl sans the eggs and paprika and gently mix together (be gentle you don’t want mashed potato salad) add salt and pepper to taste. Once everything is mixed together garnish your salad with the sliced boiled eggs and sprinkle the paprika and some parsley over the salad. If it looks good it tastes good.

Chill the potato salad for at least a couple of hours and start grilling. This is The Ultimate Potato Salad Recipe I am sure after tying this you will agree this tastes better than the watery white tasteless mess you buy in a store
