We have been wanting to make onion rings for a while now. We finally did it! Athanasia has been asking me to do this for so long now so it’s about time! I love onion rings, a trait likely passed down to me from my parents. Both of my parents love onion rings very much so this recipe is as much for them as it is for us. So, here is how you can make onion rings – gluten free and vegan style!
First you will need to slice your onion. We used a red onion because it is what we have available to us here. Take the onion and stand it on it’s side on the cutting board. Slice them as straight as you can, making them as thick as you would like your onion rings to be. Try your best to make each slice at least thick enough to keep it’s ring form. We like our onion rings to be thick so we sliced our onion accordingly.
Now, you will need two medium to large mixing bowls. One bowl will contain the wet mixture and the other bowl will contain the dry mixture.
Ingredients for the dry mixture:
- 1/2 cup of brown rice flour
- 1/2 cup of corn flour (North America example of flour used or example for Europe).
- 1 teaspoon of finely ground sea salt
Whisk dry ingredients until blended consistently.
Ingredients for the wet mixture:
- 1 cup of coconut milk
- 2 Tablespoons of corn starch (tapioca starch would work as well)
Whisk the wet mixture until smooth.
Instructions for making the onion rings:
- Dip each onion ring slice in the wet mixture, then the dry mixture. For best results dip it back into the wet mixture and one last dip in the dry mixture. This is exactly how we made ours. Carefully set the onion rings on a large plate until they are all dipped and coated with the flour mixture.
- Once they are ready to be fried, pour about 1 liter of sunflower oil into a large pot and place it over medium heat on the stove. Once the oil has reached a hot enough temperature, begin placing just enough rings to barely touch each other into the pot. Do your best to not overlap the rings because they will stick together! They must be allowed room to float to the top of the oil when they heat up. The rings only need to be fried for 3 to 4 minutes when the oil is at the optimum temperature. They are done when they turn a nice light brown color; without burning.
- Use tongs or the utensil of your choice to remove them from the oil, but be careful because the oil is hot! Place the finished rings on a plate lined with paper towels so the excess oil can drain off of them. Continue this process until all of your rings are done.
- Enjoy because they are delicious! I think I want to go make more of them after writing this recipe!
